Our team of pizzaioli, I+D, chefs, waiters and waitresses, administration, communication, reservations, etc.
How would you describe the food there?
We are an artisan pizzeria with organic, local and seasonal products. Our obsession is to make unique pizzas, in which we apply all our cooking knowledge, carefully selecting each ingredient with local producers, some of which we even make ourselves (cold meats, cheeses, etc.) to guarantee the highest quality; and we do it, respecting and following the artisan tradition in the processes that we have been perfecting day by day.
Do you see Sartoria Panatieri as a continuation of any particular culinary tradition?
We understand Sartoria Panatieri as a return to the origin, taking care of the products and using very traditional techniques.
What is your most popular dish? Can you talk us through the inspiration for the recipe?
The most popular dish right now is the #1 pizza (Best Pizza of Europe by 50 Top Pizza), which is our reinterpretation of the classic Margarita. The tomato sauce recipe, for example, is inspired by the sauce our grandmothers used to make.
Where did your interest in cooking come from?
In the case of Rafa, it is something that was born of himself. In the case of Jorge, his father is a cook and since he was little he has lived with the hospitality industry
